1. Nyama Choma (The Social BBQ)

You cannot visit Tanzania without trying Nyama Choma, which literally translates to "roasted meat." It is usually goat (mbuzi) or beef, slow-roasted over charcoal until tender and smoky.

It is traditionally eaten with your hands and served with a side of kachumbari (a fresh tomato and onion salad) and sometimes cooked bananas or chips. It's not just a meal; it's a social event.

2. Pilau (The Spice Rice)

Heavily influenced by the spice trade, Pilau is a festive dish often served at weddings and holidays. It is rice cooked in a seasoned broth with meat (chicken or beef) and a blend of spices including cardamom, cinnamon, cloves, and cumin. The aroma alone is intoxicating!

3. Chipsi Mayai (The Street Food King)

If you need a quick, filling, and delicious lunch, look no further than Chipsi Mayai (Chips and Eggs). It is essentially a French fry omelet. You will find it at almost every food stall. Pair it with some pili-pili (chili sauce) for a kick.

4. Ugali (The National Staple)

Ugali is a stiff porridge made from maize flour. It is the backbone of Tanzanian cuisine. It has a mild taste and is used as a utensil to scoop up savory stews, beans (maharage), or spinach (mchicha). It is simple, hearty, and sustains millions of East Africans every day.

5. Zanzibar Pizza

Found exclusively at the Forodhani Gardens night market in Stone Town, this isn't your typical Italian pizza. It is a thin dough filled with minced meat, veggies, egg, mayo, and cheese, then fried on a griddle. Sweet versions with banana and chocolate are also available for dessert.
